How to Make Bathua Paneer Paratha
- Prepare the bathua: Wash bathua leaves thoroughly and boil them in water. Let them cool and grind to a fine paste in a mixer.
- Knead the dough: In a bowl, mix wheat flour, salt, and 2 tbsp oil. Add the bathua paste and knead into a soft dough. Cover and let it rest for 15 minutes.
- Prepare the paneer filling: Take grated paneer, add cumin seeds, chopped onion, ginger, and green chili. Mix in red chili powder, coriander powder, and garam masala. Finally, add salt and coriander leaves and mix well.
- Shape the paratha: Make small dough balls and roll them slightly. Place a tablespoon of paneer filling in the center, fold the edges, and roll gently into a circle.
- Cook the paratha: Heat a tawa and cook the paratha on both sides. Once golden, drizzle some ghee on top and roast until crisp.
- Serve: Serve hot Bathua Paneer Parathas with yogurt, pickle, or your favorite side dish.
