- 2 cups wheat flour.
- 1 cup fresh Moringa leaves, finely chopped.
- 1 finely chopped onion.
- 2 finely chopped green chillies.
- 1 teaspoon grated ginger.
- 1/2 teaspoon celery.
- 1/2 teaspoon turmeric.
- 1/2 teaspoon red chilli powder.
- 1/2 teaspoon cumin powder.
- 2 tablespoons curd.
- Salt as per taste.
- Ghee or oil for frying the parathas
Method of preparation
Prepare Moringa Leaves
First, separate the moringa leaves from the stems. Wash them thoroughly with water. Then, finely chop them. If you find the leaves to be a bit bitter, soak them in lukewarm water for 5 minutes. This will reduce the bitterness.
Knead the dough
Place wheat flour in a large bowl. Add chopped moringa leaves, onion, green chilies, ginger, celery, turmeric, red chili, cumin powder, yogurt, and salt. Mix everything well.
Now, add water little by little and knead into a soft dough. Cover the dough with a damp cloth and let it rest for 15 to 20 minutes. This will allow the dough to form properly.
