Banaras Kachori Recipe

The mention of Banaras brings to mind its delicious and spicy food, and the mere mention of its Kachoris (shortbread) makes one's mouth water. And the Kachoris are a much-loved favorite. Crispy on the outside and richly spiced on the inside, they are a delight to eat with breakfast or evening tea. If you also enjoy the taste of Banaras Kachoris, it's quite easy to make them at home. Just keep a few things in mind when kneading the dough and frying the Kachoris. Let's learn how to make Banaras' special crispy Kachoris at home.

Ingredients for making crispy shortbread

To make Banarasi crispy kachori, first prepare the ingredients. You'll need flour, moong or urad dal, oil or ghee, salt, asafoetida, cumin seeds, fennel seeds, coriander powder, red chili, dry mango powder, and a little garam masala. Before kneading the dough, add a little oil or ghee to the batter, and then add water to knead. Enough oil to fry the kachoris. If you prefer a spicier taste, you can add some kasuri methi to the spices.

First, prepare the spicy filling.

First, soak urad or mung dal in water for a few hours. Drain the water and grind the dal, making sure it doesn't become too small. Heat some oil in a pan and add cumin seeds, fennel seeds, and asafoetida. Add the ground dal and fry thoroughly. Add salt, red chili, coriander powder, dry mango powder, and garam masala, and mix. Cook the filling until the water evaporates completely. Then, let it cool.

Be careful while kneading the dough.

Now prepare the dough for the shortbread. Place the flour in a large bowl and add a little salt. Then, add oil or ghee for the filling and mix well with both hands. Mix until the flour begins to bind together like a laddu when pressed. Gradually add water and knead into a soft dough. The dough should be neither too stiff nor too soft. Cover and let it rest for 15 to 20 minutes, making it easier to roll out the shortbread dough.

Fill the prepared masala in the shortbread

Once the dough has set, roll it into small balls. Spread one ball slightly with your hands and fill the center with the prepared lentil filling. Lift the edges and seal the filling tightly. Then, press it lightly with your hands to shape it into a kachori. Don't make the kachori too thin, as even slightly thick kachoris remain crispy on the outside and delicious on the inside. Prepare all the kachoris in this manner.

Fry the kachoris on a low flame.

Now heat enough oil in a pan. Do not heat the oil too much; otherwise, the kachoris will quickly turn golden on the outside but will not cook properly on the inside. Gently place the kachoris in the oil and fry them over low heat. Turn them occasionally to ensure even color on both sides and a crispy crust. Once golden and crispy, remove them and serve with hot potato curry, green chutney, and pickle.
