Preparing Makhana and Cashews
To begin, take 2 cups of makhana (fox nuts) and roast them well. While roasting, add a little ghee so that the makhana become crispy from the inside and get a rich flavor. Once roasted, take 1 cup of cashews. Add both the roasted makhana and cashews to a mixer jar and grind them together.
Making a Fine Powder
While grinding, ensure that the mixture turns into a very fine powder. Check the texture after grinding—if any coarse pieces remain, strain the mixture using a sieve. Grind the leftover coarse bits again for a smooth result.
Next, grind 1 large cup of sugar along with 2–3 peeled green cardamom pods into a fine powder and keep it aside. Similarly, grind 1 cup of pistachios into a smooth powder.
Preparing the Dough
Now take a large bowl and add the powdered cashew-makhana mix along with the powdered sugar. Add slightly more than 1 cup of milk powder to this mixture. Mix everything well and slowly add milk to knead it into a soft, smooth dough. Once the dough comes together nicely, keep it aside for a few minutes to set.
Making the Pistachio Filling
Take out one-fourth portion of the prepared cashew dough. Add the powdered pistachio to it and mix well. To enhance the color, add a little green food color and knead again until the color and flavor blend evenly.
Rolling the Kaju Pista Roll
Make 2–3 large portions from the plain white dough and roll them slightly flat. Now make thin rolls from the green pistachio dough. Place the green roll in the center of the white dough sheet. Carefully wrap the white layer around the pistachio roll and roll it evenly. You can keep the roll thick or thin as per your preference.
Decoration and Cutting
Prepare all the rolls in the same way and place them on butter paper. For a festive and premium touch, apply silver varak on top. Keep the rolls under a fan for some time so they set properly. Once firm, cut them into equal pieces using a sharp knife.
