If you're craving something spicy and tangy with your meal, Rajasthani-style chilli taporas are a great choice. This traditional Rajasthani dish, made with green chillies, is a popular accompaniment to dal-bati, dal-rice, and parathas. Green chillies are combined with spices like fennel, coriander, turmeric, and dry mango powder. It doesn't require many ingredients. With a few simple steps, you can enjoy it at home.

First, prepare the green chilies

To make chilli taporas, choose thick and less spicy green chillies. First, wash and dry about 200 grams of green chillies thoroughly. Remove the stems and cut them lengthwise. If you prefer a less spicy dish, you can remove some of the seeds from the chillies. Now, in a bowl, combine one teaspoon of fennel seeds, half a teaspoon of coriander powder, half a teaspoon of turmeric, a little dry mango powder, and salt to taste. If desired, add a little asafoetida and cumin seeds. Mix all the spices thoroughly and keep them ready.

Now, heat two tablespoons of mustard oil in a pan. Once the oil is hot, add a little cumin seeds and asafoetida. Then, add the chopped green chilies and lightly fry for a few minutes.
Add the prepared spice mixture and mix well over low heat. If needed, add one to two tablespoons of water to help the spices adhere to the chilies. Cover the pan and cook for a few minutes, stirring occasionally.

Serve with dal-bati and parathas

Once the Rajasthani chilli taporas are ready, let them cool for a while. Then serve with dal-bati, dal-rice, roti, or paratha. The flavor of mustard oil and spices makes this dish special. If you prefer a more sour taste, slightly increase the amount of dry mango powder. To keep the spiciness low, choose less spicy green chillies. Store them in a clean, dry container in the refrigerator and use them quickly. Here's how to prepare Rajasthani-style chilli taporas at home with fewer ingredients.
