Mawa Kachori Recipe
Mawa Kachori from Jodhpur, Rajasthan, is a popular dessert among sweet lovers. Its crispy outer layer and sweet mawa filling make it unique. It's dipped in sugar syrup, making every bite luscious. If you'd like to try this sweet treat at home, you can easily make it. Let's learn the recipe for Mawa Kachori.
Ingredients for making Mawa Kachori
To prepare the dough, use 2 cups of flour, 4 tablespoons of ghee, and enough water. For the filling, use 1 cup of mawa (milk flour), 1/2 cup of powdered sugar, 2 tablespoons of finely chopped almonds and cashews, and 1/2 teaspoon of cardamom powder. For the syrup, use 1 cup of sugar and 1/2 cup of water. Use oil or ghee for frying the kachoris.
First, add ghee to the flour and mix well. Add water little by little to knead a soft dough. Cover the dough and let it rest for about 15-20 minutes. This will allow the dough to set well and make it easier to roll out the kachoris.
Make the sweet mawa filling.
Put mawa in a pan and lightly fry it over low heat. When the mawa turns light golden, turn off the heat and let it cool. Now add powdered sugar, chopped almonds and cashews, and cardamom powder. Be careful not to add sugar while the mawa is hot, otherwise, the filling will become soggy.
Fill the kachori with the filling and fry it.
Form small balls of dough and roll them lightly. Place the mawa filling in the center and seal the edges tightly. Gently shape them into a round shape. Heat oil or ghee in a pan and fry the kachoris over low to medium heat until golden and crisp. Frying over high heat can cause the outer layer to color too quickly, while the inner layer may not cook properly.
Prepare by dipping them in syrup.
Heat sugar and water in a pan. Cook until the sugar dissolves and the syrup thickens slightly. Dip the prepared kachoris briefly in the syrup and remove them. Garnish with chopped nuts. The delicious mawa kachori is ready. Serve it cold or warm.
