Green chilli pickle

Whether it's dal-rice or parathas, a little pickle enhances the flavor. If you like spicy food, you can make a quick green chili pickle at home. It doesn't require many ingredients. Simply combine green chilies with a few spices, lemon juice, and oil to make it easily.

First, prepare the green chilies.

To make chili pickle, take about 200 grams of green chilies. Wash them thoroughly with water and dry them thoroughly with a clean cloth. Remove the stems and cut them into small pieces. If you don't like spicy chilies, choose less spicy chilies. In a bowl, combine 1 teaspoon fennel seeds, 1/2 teaspoon fenugreek seeds, 1/2 teaspoon turmeric, and salt to taste. If desired, add a little mustard powder. Mix all these spices thoroughly with the chili pieces. This will give the pickle a spicy, mild aroma and a spicy flavor.

Mix lemon juice and oil.

Now add 1 to 2 tablespoons of lemon juice to the chili and spice mixture. Then, heat and cool 1 to 2 tablespoons of mustard oil and add it to the mixture. Mix everything well so that the spices coat the chili. Letting it sit for a while helps the flavors blend evenly.

Pickle will be ready in a few minutes.

Store this chili pickle in a clean, dry glass jar. It can be eaten immediately, but the spices will infuse the chilies with flavor better after a short period of time. Make small quantities and store it in the refrigerator. This is a quick pickle and doesn't have a long shelf life, so don't leave it out and store it for several days. If you notice an odor, mold, or any unusual discoloration, don't use it.

When it is completely ready, enjoy eating it with roti, paratha, dal rice.
