The special thing is that even without onions and garlic, the fish's flavor can be maintained with the help of spices and ginger.

This recipe uses ginger, green chilies, and whole spices along with the fish. Spices like caraway seeds, cinnamon, cloves, and cardamom add a pleasant aroma and flavor to the gravy. This method is especially good for those who don't want to cook fish in a heavy gravy.
For this, take about 250 grams of fish and cut it into medium-sized pieces. Try to use the fish only after cleaning it thoroughly. Additionally, you will need 1 tablespoon lemon juice, 4 to 6 green chilies, a 4-inch piece of ginger, and 4 tablespoons of oil. For spices, take half a teaspoon of cumin seeds, half a teaspoon of caraway seeds, a 2-inch piece of cinnamon, 2 cloves, 1 bay leaf, 2 green cardamoms, 1 black cardamom, and 1 inch of mace. You will also need 1 teaspoon of salt, 1 teaspoon of turmeric, 1 teaspoon of red chili powder, and 1 teaspoon of coriander powder.
First of all, prepare the fish like this.
First, wash the fish pieces thoroughly under running water. Then, pour lemon juice over them and let them sit for 5 to 7 minutes. Then, rinse the fish again and drain all the water thoroughly.
Now, sprinkle salt and turmeric over the fish and mix well with your hands. Set it aside for a while. Meanwhile, peel the ginger and make a fine paste. Slit the green chilies in half and remove the seeds if desired.
Lightly fry the fish first.
Now heat oil in a frying pan. Once the oil is hot, add the fish pieces and fry until lightly golden on both sides. This should take about 2 to 3 minutes on each side. Do not over-fry the fish, or it may become dry. Once lightly golden, remove the fish pieces and set them aside.
Now prepare onion-garlic gravy.
Add cumin seeds and caraway seeds to the same pan. Then add cinnamon, cloves, black cardamom, mace, bay leaf, and green cardamom and fry for a few seconds. When the whole spices begin to smell fragrant, add ginger paste and slit green chilies. Fry over medium-low heat for a few seconds. Reduce the heat and add salt, red chili powder, coriander powder, and turmeric, mixing well. Be sure to let the spices burn.
Then, add about a cup of water and bring the gravy to a boil. After simmering for a few minutes, add the pre-fried fish. Cook over low heat for about 3 to 4 minutes, allowing the spices to infuse the fish.
Finally, serve like this.
When the gravy and fish are cooked through, turn off the heat. Transfer the fish to a serving bowl and garnish with finely chopped coriander leaves. This fish can be served with hot plain rice.
