Bakrid feast special: this special mutton dish

  1. Shahi Mutton Biryani

First, marinate the mutton with yogurt, ginger-garlic paste, red chili, turmeric, salt, and roasted onions. Roast the whole spices in a thick-bottomed pot and cook the marinated mutton thoroughly. Meanwhile, boil the rice with the whole spices until it's 80% cooked. Now, layer the mutton and rice in the pot. Top with coriander, saffron milk, and ghee. Seal the pot completely. Let it simmer over low heat for 20 minutes, and the dish is ready.

  1. Mutton Korma

Heat ghee in a pan or a pressure cooker and fry whole spices and finely chopped onions until golden. Add the mutton and fry over high heat for 5-7 minutes to evaporate the water. Then, add coriander powder, cumin powder, Kashmiri red chili, and a little yogurt and cook until the spices release oil. Add cashew and lotus seed paste. Cook until the mutton is completely cooked. This dish is ready.

  1. Shami Kebab

Boil boneless mutton mince with gram dal, whole red chilies, garlic, ginger, onion, and garam masala powder in a pressure cooker with a little water. Once the dal and mince are cooked through and the water has evaporated, grind them finely in a mixer or on a grinding stone. Add finely chopped coriander leaves, green chilies, and mint leaves. Form small balls from the minced meat and shallow fry them in a pan with a little ghee or oil until golden brown on both sides.

  1. Kadhai Mutton

Heat oil in a pan and sauté the mutton and ginger-garlic paste over high heat. Then, add generously chopped tomatoes, green chilies, crushed coriander seeds, and crushed black pepper. Cover and cook until the tomatoes are completely tender and the water evaporates. When the oil begins to separate from the spices, add a little thick yogurt and sauté over high heat. Top with finely chopped ginger and coriander leaves and serve hot.

  1. Mutton Stew

Heat oil or ghee in a pressure cooker. Add a generous amount of chopped onion (about half the amount of mutton) and whole spices (bay leaves, cloves, cardamom, cinnamon, and whole black peppercorns). When the onion turns light pink, add the mutton, ginger-garlic paste, dried red chilies, and a little yogurt. Saute well. Very little or no water is added to the stew, as the onion and mutton release water on their own. Close the cooker and cook on low heat for 3-4 whistles, and your mutton stew is ready.
